A rich and indulgent breakfast made with buttery croissants soaked in a sweet cinnamon custard, then cooked until golden and extra crispy on the outside while remaining soft and creamy inside.

Ingredients

  • 4 croissants (preferably slightly stale)
  • 3 large eggs
  • 1 cup milk or heavy cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter (for cooking)
  • Maple syrup (for serving)
  • Powdered sugar (for garnish)
  • Fresh berries (optional)

Instructions

  1. Slice the croissants in half lengthwise.
  2. In a mixing bowl, whisk together the eggs, milk or cream, sugar, vanilla extract, and cinnamon until well combined.
  3. Dip each croissant half into the custard mixture, allowing it to soak briefly without becoming overly soggy.
  4. Heat butter in a skillet over medium heat.
  5. Place the soaked croissants cut-side down in the skillet.
  6. Cook until golden brown and crispy, about 3–4 minutes.
  7. Flip and cook the other side until heated through and crisp.
  8. Remove from the skillet and serve warm with maple syrup, powdered sugar, and fresh berries if desired.

Notes

  • Slightly stale croissants work best as they absorb custard without falling apart.
  • Avoid overcrowding the pan to ensure even crisping.
  • Add orange zest to the custard for a citrus twist.
  • Use heavy cream instead of milk for a richer flavor.
  • Reheat in a skillet or oven to maintain crispness.
