Ingredients
4 chicken breasts or thighs
2 tablespoons olive oil
2 tablespoons honey
2 tablespoons lime juice
2 cloves garlic, minced
1/2 teaspoon paprika
Salt and pepper to taste
1 large mango, diced
1/4 cup red onion, finely chopped
1/4 cup cilantro, chopped
1 tablespoon lime juice (for salsa)
Salt to taste (for salsa)
Chili flakes or jalapeño (optional)
Instructions
In a bowl, whisk together olive oil, honey, lime juice, minced garlic, paprika, salt, and pepper.
Coat the chicken with the marinade and let it sit for 15–30 minutes.
Heat a skillet or grill over medium heat.
Cook the chicken for 5–7 minutes per side, until fully cooked and slightly caramelized.
In another bowl, combine diced mango, red onion, cilantro, lime juice, and salt.
Mix the salsa gently until well combined.
Remove the chicken from heat and let it rest briefly.
Serve the chicken topped with the fresh mango salsa.
Notes
Chicken thighs can be used for a juicier and more flavorful result.
Grilling the chicken adds a smoky flavor.
Pineapple can be substituted for mango for a tropical variation.
Add avocado to the salsa for extra creaminess.
Adjust spice level with chili flakes or fresh jalapeño.
Store chicken and salsa separately in the refrigerator for up to 3 days.
Reheat chicken gently before serving and add fresh salsa afterward.
The chicken can also be baked at 200°C (400°F) for 20–25 minutes.
