Ingredients

  • 1 sleeve saltine crackers
  • 1 cup unsalted butter
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 8 oz (225g) cream cheese, softened
  • 1 cup powdered sugar
  • 23 tablespoons heavy cream or milk
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • Pinch of salt (optional)
  • Optional: melted white chocolate or caramel for drizzling

Instructions

  1. Line a baking tray with parchment paper and arrange saltine crackers in a single even layer.
  2. In a saucepan, melt butter and brown sugar together over medium heat, stirring until smooth and slightly thickened.
  3. Add vanilla extract and stir well.
  4. Pour the hot toffee mixture evenly over the saltine crackers and spread quickly to coat.
  5. Bake at 180°C (350°F) for 8–10 minutes until bubbly and set.
  6. Let cool slightly until firm but still spreadable.
  7. In a bowl, beat cream cheese with powdered sugar and cream or milk until smooth and fluffy.
  8. Spread the cream cheese mixture evenly over the cooled toffee layer.
  9. Mix cinnamon and granulated sugar together, then sprinkle generously over the creamy layer.
  10. Chill for 1–2 hours until fully set, then cut into bars.

  • Cook the toffee until it bubbles properly to ensure it sets well.
  • Chill thoroughly before cutting for clean slices.
  • Graham crackers can be used instead of saltines for a sweeter base.
  • Add chopped nuts or chocolate drizzle for extra texture and flavor.
