These Crispy Steak & Cheese Tortilla Melts are packed with juicy steak, sautéed vegetables, and gooey melted cheese wrapped inside crispy golden tortillas. Perfect for quick dinners, game nights, or casual gatherings, they deliver bold flavor and satisfying texture in every bite.

Ingredients

  • 1 pound flank steak or sirloin steak, thinly sliced
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 small onion, sliced
  • 1 bell pepper, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • Fresh parsley, chopped for garnish

Instructions

  1. Slice the steak into thin strips and season with garlic powder, paprika, salt, and black pepper.
  2. Heat olive oil in a skillet over medium-high heat and cook the steak until browned and tender.
  3. Remove the steak from the skillet and set aside.
  4. In the same skillet, cook the onions and bell peppers until soft and slightly caramelized.
  5. Place one tortilla into a clean skillet over medium heat.
  6. Sprinkle a layer of cheddar and Monterey Jack cheese over half of the tortilla.
  7. Add cooked steak and sautéed vegetables on top of the cheese.
  8. Sprinkle additional cheese over the filling and fold the tortilla in half.
  9. Brush the outside lightly with butter and cook until golden brown and crispy on both sides.
  10. Repeat with the remaining tortillas and fillings.
  11. Slice into wedges, garnish with fresh parsley, and serve warm.
