A rich and comforting creamy mushroom pasta made with tender mushrooms, garlic, and a silky parmesan cream sauce, perfect for a quick and satisfying meal.

Ingredients

  • 300g pasta (fettuccine, penne, or spaghetti)
  • 250g mushrooms (sliced)
  • 3 garlic cloves (minced)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Salt (to taste)
  • Black pepper (to taste)
  • 2 tbsp fresh parsley (chopped)

Instructions

  1. Cook the pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a large pan, heat olive oil and butter over medium heat.
  3. Add the sliced mushrooms and cook until they release moisture and turn golden brown.
  4. Stir in minced garlic and cook until fragrant.
  5. Pour in the heavy cream and let it simmer gently until slightly thickened.
  6. Add grated parmesan cheese and stir until the sauce becomes smooth and creamy.
  7. Add the cooked pasta to the sauce, tossing to coat evenly. Add reserved pasta water as needed to loosen the sauce.
  8. Season with salt and black pepper to taste.
  9. Garnish with fresh parsley and serve immediately.

Notes

  • Use a mix of mushrooms like cremini, button, and portobello for deeper flavor.
  • Add grilled chicken or shrimp for extra protein.
  • For a lighter version, reduce cream and use more pasta water.
  • For vegan option, substitute plant-based cream and cheese.
  • Reheat gently with a splash of milk or cream to restore texture.
