Ingredients

  • 12 ounces pasta
  • 2 tablespoons olive oil
  • 2 chicken breasts, sliced into bite-sized pieces
  • 3 garlic cloves, minced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Red pepper flakes for garnish (optional)

Instructions

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the chicken pieces and cook until golden brown and fully cooked.
  4. Stir in the minced garlic and cook for about 1 minute until fragrant.
  5. Pour in the chicken broth and heavy cream, stirring well.
  6. Add the Parmesan cheese and Italian seasoning, stirring until the sauce becomes smooth and creamy.
  7. Mix in the fresh spinach and cook until wilted.
  8. Add the cooked pasta to the skillet and toss everything together until evenly coated with the sauce.
  9. Season with salt, black pepper, and red pepper flakes if desired before serving.

Notes

  • Penne, fettuccine, or rotini work especially well with the creamy sauce.
  • Frozen spinach may be used if thawed and drained first.
  • Use shrimp instead of chicken for a seafood variation.
  • Add mushrooms, cherry tomatoes, or broccoli for extra vegetables.
  • Half-and-half can replace heavy cream for a lighter version.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheat gently with a splash of milk or broth to keep the sauce creamy.
