Crispy, golden Corn Fritters packed with sweet corn kernels and savory seasonings. These easy-to-make fritters feature crunchy edges and tender centers, making them a delicious snack, appetizer, breakfast, or side dish for any occasion.

Ingredients

  • 2 cups corn kernels (fresh, canned and drained, or frozen and thawed)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 large eggs
  • 1/4 cup milk
  • 2 green onions, thinly sliced
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika (optional)
  • 1/4 cup vegetable oil, for frying

Instructions

  1. Place the corn kernels in a large mixing bowl.
  2. Add the flour, baking powder, garlic powder, salt, black pepper, and paprika if using. Stir to combine.
  3. In a separate bowl, whisk together the eggs and milk.
  4. Pour the wet ingredients into the dry ingredients and stir until a thick batter forms.
  5. Fold in the sliced green onions.
  6. Heat a thin layer of vegetable oil in a large skillet over medium heat.
  7. Drop heaping spoonfuls of batter into the hot oil and gently flatten each fritter slightly.
  8. Cook for 2–3 minutes per side, or until golden brown and crisp.
  9. Transfer the fritters to a paper towel-lined plate to drain excess oil.
  10. Serve warm with your favorite dipping sauce or toppings.
