  • 23 cups ice cream (any flavor)
  • 1/2 cup chocolate chips or sprinkles (optional)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Prepare or bake cookies and allow them to cool completely.
  2. Take one cookie and place a scoop of ice cream on the flat side.
  3. Top with another cookie and gently press to form a sandwich.
  4. Roll the edges in chocolate chips, sprinkles, or chopped nuts if desired.
  5. Place the sandwiches on a tray and freeze for 30–60 minutes until firm.
  6. Serve slightly softened for best texture.
