A rich and comforting baked brioche dish soaked in a cinnamon maple custard, baked until golden with a soft, custardy center and lightly crisp top, perfect for breakfast or dessert.

Ingredients

  • 1 loaf brioche bread, cut into cubes
  • 4 large eggs
  • 2 cups milk or heavy cream
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons butter (for greasing and dotting)
  • 1/2 cup chopped pecans or walnuts (optional)
  • Powdered sugar for topping (optional)

Instructions

  1. Preheat oven and grease a baking dish with butter.
  2. Cut brioche into bite-sized cubes and place them evenly in the dish.
  3. In a bowl, whisk together eggs, milk or cream, maple syrup, brown sugar, cinnamon, vanilla extract, and salt until smooth.
  4. Pour the custard mixture evenly over the brioche cubes, gently pressing the bread so it absorbs the liquid.
  5. Let the mixture soak for 10–15 minutes.
  6. Dot the top with small pieces of butter and sprinkle with nuts if using.
  7. Bake until the top is golden and the center is set but still slightly soft and custardy.
  8. Allow to cool slightly before serving.
  9. Optionally dust with powdered sugar before serving.

Notes

  • Day-old brioche works best for better absorption of custard.
  • Letting the mixture rest improves texture and flavor.
  • Add apples, bananas, or chocolate chips for variations.
  • Check doneness by ensuring the center is set but slightly soft.
  • Drizzle extra maple syrup when serving for added sweetness.
