A smooth and refreshing chilled avocado soup with a creamy texture, bright citrus notes, and fresh herbs, perfect for warm days.

Ingredients

  • 3 ripe avocados
  • 2 cups vegetable broth
  • 1/2 cup Greek yogurt or sour cream
  • 2 tbsp lime juice
  • 1 clove garlic
  • 1 cup cucumber, chopped
  • 1/4 cup fresh cilantro or parsley
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cut avocados in half, remove pits, and scoop flesh into a blender.
  2. Add vegetable broth, Greek yogurt, lime juice, garlic, and cucumber.
  3. Blend until smooth and creamy.
  4. Drizzle in olive oil while blending to enhance texture.
  5. Taste and adjust seasoning with salt and black pepper.
  6. Chill in the refrigerator for at least 1 hour before serving.
  7. Garnish with fresh herbs and a drizzle of olive oil before serving.
