Ingredients

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 2 celery stalks, finely chopped
  • 1/4 cup red onion, finely diced
  • 1 medium carrot, grated
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup mayonnaise or vegan mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices bread
  • 4 lettuce leaves
  • 4 tomato slices (optional)

Instructions

  1. Place the chickpeas in a large mixing bowl and mash them with a fork or potato masher, leaving some texture.
  2. Add the chopped celery, red onion, grated carrot, and parsley.
  3. Stir in the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
  4. Mix until all ingredients are evenly combined.
  5. Taste and adjust seasonings as needed.
  6. Spread the chickpea salad mixture evenly onto four slices of bread.
  7. Top with lettuce leaves, tomato slices, or any desired toppings.
  8. Place the remaining bread slices on top and serve immediately.
