Ingredients
1 lb chicken thighs or breast
2 tbsp olive oil
3 cloves garlic, minced
2 tbsp lemon juice
1 tsp ground cumin
1 tsp paprika
1/2 tsp turmeric
1 tsp ground coriander
1/2 tsp ground cinnamon
1/2 tsp salt
1/2 tsp black pepper
4 flatbreads or pita
1 cup lettuce, shredded
1 cup tomatoes, sliced
1 cup cucumber, sliced
1/2 cup red onion, thinly sliced
For the tahini sauce:
1/3 cup tahini
2 tbsp lemon juice
1 clove garlic, minced
2–4 tbsp water
1/4 tsp salt
Instructions
In a bowl, mix olive oil, garlic, lemon juice, cumin, paprika, turmeric, coriander, cinnamon, salt, and black pepper.
Add chicken and coat well. Marinate for at least 30 minutes.
Cook chicken in a skillet or grill over medium heat until fully cooked and browned.
Let chicken rest, then slice into strips.
In a small bowl, whisk together tahini, lemon juice, garlic, water, and salt until smooth.
Warm the flatbreads or pita.
Fill each with chicken, lettuce, tomatoes, cucumber, and red onion.
Drizzle tahini sauce over the filling.
Wrap tightly and serve.
Notes
Chicken thighs are juicier, but chicken breast works well too.
Add pickles or olives for extra tang.
Include chili flakes or spicy sauce for heat.
Substitute tahini sauce with yogurt sauce if preferred.
