A flavorful and satisfying sandwich made with juicy chicken, aromatic pesto, fresh vegetables, and melted cheese, all layered in toasted bread.

Ingredients

  • 2 chicken breasts
  • 3 tbsp pesto
  • 2 sandwich rolls or 4 slices bread
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 slices mozzarella or provolone cheese
  • 1 tomato, sliced
  • 1 cup fresh spinach or arugula

Instructions

  1. Season the chicken breasts with olive oil, salt, and black pepper.
  2. Cook the chicken in a pan or grill over medium heat for 6–7 minutes per side until fully cooked and golden.
  3. Remove from heat and let the chicken rest for 5 minutes, then slice thinly.
  4. Toast the bread or sandwich rolls until lightly crisp.
  5. Spread pesto evenly on both sides of the bread.
  6. Layer sliced chicken, cheese, tomato slices, and fresh greens onto the bread.
  7. If desired, place the sandwich back on heat briefly to melt the cheese.
  8. Close the sandwich, slice if needed, and serve warm.
