A warm and comforting chicken meatball soup made with tender meatballs, flavorful broth, and vegetables for a nourishing and satisfying meal.

Ingredients

  • 1 lb ground chicken
  • 1 egg
  • 1/3 cup breadcrumbs
  • 2 cloves garlic, minced
  • 2 tbsp parsley, chopped
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth
  • 1 cup pasta or 3/4 cup rice (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. In a bowl, mix ground chicken, egg, breadcrumbs, minced garlic, chopped parsley, salt, and black pepper until combined.
  2. Form the mixture into small meatballs and set aside.
  3. Heat olive oil in a large pot over medium heat and sauté onion, carrots, and celery until softened.
  4. Pour in chicken broth and bring to a gentle boil.
  5. Add the meatballs carefully to the pot and cook for 10–12 minutes until fully cooked through.
  6. If using pasta or rice, add it and simmer until tender.
  7. Taste and adjust seasoning as needed.
  8. Garnish with fresh herbs and serve warm.

Notes

  • Use ground turkey as a substitute for chicken if desired.
  • Avoid overmixing the meatball mixture to keep them tender.
  • Add spinach or kale for extra greens.
  • Enhance flavor with a splash of lemon juice or grated parmesan.
  • Freeze without pasta or rice for best texture.
