A warm and satisfying sandwich featuring juicy chicken, creamy avocado, and melted cheese, all layered between crispy toasted bread.

Ingredients

  • 2 chicken breasts
  • 1 ripe avocado
  • 4 slices bread or 2 sandwich rolls
  • 1 tbsp olive oil or butter
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 slices cheese (cheddar, mozzarella, or provolone)
  • 1 tomato, sliced
  • 1 cup lettuce or spinach

Instructions

  1. Season the chicken breasts with salt and black pepper.
  2. Cook the chicken in a pan or grill over medium heat for 6–7 minutes per side until fully cooked and golden.
  3. Remove from heat, let rest for 5 minutes, then slice thinly.
  4. Mash or slice the avocado and season lightly with salt and pepper.
  5. Toast the bread with olive oil or butter until golden and crisp.
  6. Layer chicken, avocado, cheese, tomato slices, and greens onto the bread.
  7. Place the sandwich back in a pan or sandwich press and cook until the cheese melts and the bread is crispy.
  8. Slice and serve warm.

  • Add lemon juice to avocado to prevent browning.
  • Use sturdy bread like sourdough or ciabatta for best results.
