A warm and crispy chicken and avocado panini filled with juicy chicken, creamy avocado, and melted cheese. This quick and satisfying sandwich is perfect for lunch or a light dinner.

Ingredients

  • 4 slices bread (ciabatta or sourdough)
  • 1 1/2 cups cooked chicken, sliced
  • 1 ripe avocado, sliced or mashed
  • 4 slices cheese (mozzarella, provolone, or cheddar)
  • 2 tbsp butter or olive oil
  • 1 tomato, sliced (optional)
  • 1/2 cup spinach or arugula (optional)
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat a panini press or skillet over medium heat.
  2. Spread butter or drizzle olive oil on the outside of the bread slices.
  3. Layer chicken, avocado, cheese, and optional toppings inside the bread.
  4. Season lightly with salt and black pepper.
  5. Place the sandwich in the press or skillet and press down.
  6. Cook until bread is golden and crispy and cheese is melted.
  7. Remove from heat, slice, and serve warm.
