Cheesy Baked Vegetable Rolls are crispy, golden pastry rolls filled with tender sautéed vegetables and a blend of melted cheeses. Perfect as an appetizer, snack, lunch, or light dinner, these savory rolls are easy to customize and packed with comforting flavor in every bite.

Ingredients

  • 1 sheet puff pastry or 12 oz pizza dough
  • 1 medium carrot, finely diced
  • 1 red bell pepper, diced
  • 1 medium zucchini, grated and squeezed dry
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated cheddar cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Heat the olive oil in a skillet over medium heat and sauté the onion until softened, about 3 minutes.
  3. Add the carrots, bell peppers, zucchini, and garlic. Cook for 5-7 minutes until the vegetables are tender and excess moisture has evaporated.
  4. Season with Italian seasoning, salt, and black pepper. Remove from heat and let cool slightly.
  5. Stir the mozzarella and cheddar cheese into the cooled vegetable mixture.
  6. Roll out the puff pastry or pizza dough and cut into 8 equal rectangles.
  7. Place a portion of the filling onto each rectangle and roll tightly, sealing the edges.
  8. Arrange the rolls seam-side down on the prepared baking tray.
  9. Brush each roll with the beaten egg wash.
  10. Bake for 20-25 minutes, or until golden brown and crisp.
  11. Allow the rolls to cool for a few minutes before garnishing with fresh parsley and serving.
