Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/3 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups romaine lettuce, chopped
  • 2 celery stalks, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/2 cup shredded carrots
  • 1/3 cup blue cheese or ranch dressing

Instructions

  1. Season the chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper.
  2. Cook the chicken in a skillet or grill over medium heat for 6–7 minutes per side until fully cooked.
  3. Remove the chicken and toss it in buffalo sauce until evenly coated.
  4. Let the chicken rest for a few minutes, then slice into strips.
  5. In a large bowl, combine romaine lettuce, celery, cherry tomatoes, red onion, and shredded carrots.
  6. Top the salad with sliced buffalo chicken.
  7. Drizzle with blue cheese or ranch dressing.
  8. Toss gently or serve layered as desired.
