A creamy and bold buffalo chicken ranch pasta salad loaded with tender chicken, pasta, cheddar cheese, and crunchy vegetables tossed in a spicy buffalo ranch dressing. Perfect for lunches, potlucks, or quick dinners.

Ingredients

  • 12 ounces pasta, cooked and cooled
  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup buffalo sauce
  • 3/4 cup ranch dressing
  • 1 cup cheddar cheese, shredded
  • 1/2 cup celery, chopped
  • 1/4 cup red onion, diced
  • 2 green onions, sliced
  • Salt and black pepper to taste
  • Crumbled blue cheese for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions, then drain and let it cool completely.
  2. Place the cooled pasta into a large mixing bowl.
  3. Add the cooked chicken, celery, red onion, cheddar cheese, and green onions.
  4. In a small bowl, whisk together the buffalo sauce and ranch dressing until smooth.
  5. Pour the dressing over the pasta mixture and toss until evenly coated.
  6. Season with salt and black pepper to taste.
  7. Chill the pasta salad for at least 30 minutes before serving.
  8. Top with crumbled blue cheese if desired for extra buffalo flavor.

Notes

  • Rotisserie chicken is a great time-saving option.
  • Rotini, penne, or bowtie pasta work best because they hold the dressing well.
  • Add diced bell peppers or cucumbers for extra crunch.
  • Use pepper jack cheese for more spice or blue cheese dressing for a bolder flavor.
  • Reduce the buffalo sauce or add extra ranch dressing for a milder version.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Stir in a little extra ranch dressing before serving leftovers since the pasta absorbs the sauce over time.
