A crisp and refreshing broccoli slaw made with shredded broccoli stems, carrots, red cabbage, green onions, sunflower seeds, and dried cranberries tossed in a creamy sweet-and-tangy dressing. This versatile side dish is perfect for picnics, potlucks, barbecues, and everyday meals.

Ingredients

  • 1 package (12 oz) broccoli slaw mix
  • 1 cup carrots, shredded
  • 1 cup red cabbage, shredded
  • 3 green onions, thinly sliced
  • 1/3 cup sunflower seeds
  • 1/2 cup dried cranberries
  • 1/2 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Place the broccoli slaw mix, shredded carrots, red cabbage, green onions, sunflower seeds, and dried cranberries in a large mixing bowl.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth.
  3. Pour the dressing over the slaw mixture.
  4. Toss thoroughly until all vegetables are evenly coated.
  5. Cover and refrigerate for at least 15 minutes to allow the flavors to blend.
  6. Stir well before serving and adjust seasoning if needed.

Notes

  • For extra crunch, add sliced almonds, chopped pecans, or walnuts.
  • Replace part of the mayonnaise with Greek yogurt for a lighter dressing.
  • Diced apples, raisins, or grapes add natural sweetness.
  • Shredded chicken or chickpeas can be added for extra protein.
  • The flavor improves after a few hours of chilling.
  • Stir before serving if the dressing settles.
