A dramatic and luxurious blackberry velvet gothic cake with a deep color, soft crumb, and a subtle tart blackberry flavor that perfectly balances its rich sweetness.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable oil or melted butter
  • 2 tsp vanilla extract
  • 3/4 cup blackberry puree
  • 1 tsp black food coloring (optional)
  • 1 cup hot water or coffee

Instructions

  1. Preheat the oven to 180°C (350°F) and grease and line cake pans.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, buttermilk, oil or melted butter, vanilla extract, and blackberry puree.
  4. Combine wet and dry ingredients, mixing until smooth.
  5. Slowly add hot water or coffee, stirring until the batter is thin and well blended.
  6. Add black food coloring if using to deepen the color.
  7. Divide the batter evenly into prepared pans.
  8. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow cakes to cool completely before frosting or decorating.

Notes

  • Add a layer of blackberry jam between cake layers for extra flavor.
  • Use chocolate ganache, buttercream, or cream cheese frosting.
  • Can be made into cupcakes for easier serving.
  • Food coloring is optional but enhances the gothic appearance.
  • Let cake come to room temperature before serving for best texture.
