Ingredients

  • 400g ground beef or sliced steak
  • 1 cup quinoa
  • 2 cups water
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 2 cups cooked or fresh vegetables (broccoli, bell peppers, or zucchini)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 2 tablespoons fresh parsley or cilantro, chopped
  • Optional: lemon vinaigrette or yogurt dressing

Instructions

  1. Rinse the quinoa and cook it with water according to package instructions (about 15 minutes). Fluff with a fork and set aside.
  2. Heat olive oil in a pan over medium heat and cook the beef until browned and fully cooked.
  3. Add minced garlic, salt, black pepper, paprika, and cumin to the beef and stir well.
  4. If using vegetables that require cooking, sauté or roast them until tender. Prepare fresh vegetables as needed.
