Hearty and flavorful BBQ chicken rice bowls featuring smoky, saucy chicken served over fluffy rice with fresh and colorful toppings.

Ingredients

  • 2 cups cooked rice
  • 2 chicken breasts or 4 chicken thighs
  • 1/2 cup barbecue sauce
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup corn kernels
  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp fresh cilantro, chopped
  • 2 lime wedges

Instructions

  1. Season chicken with olive oil, garlic powder, paprika, salt, and black pepper.
  2. Cook chicken in a skillet or grill over medium heat until fully cooked.
  3. Brush chicken with barbecue sauce and cook briefly until slightly caramelized.
