Ingredients

  • 500g salmon fillets, cut into bite-sized pieces
  • 3 tablespoons cornstarch
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 cups cooked rice or quinoa
  • 1 cup cucumber, sliced
  • 1 cup carrots, shredded
  • 1 avocado, sliced
  • 2 green onions, chopped
  • For the bang bang sauce:
  • 1/3 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 12 teaspoons sriracha (adjust to taste)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lime juice

Instructions

  1. Pat the salmon pieces dry and season with salt, black pepper, and paprika.
  2. Lightly coat the salmon pieces in cornstarch.
  3. Heat olive oil in a pan over medium-high heat and cook the salmon bites for 8–10 minutes, turning until golden and crispy on all sides.
  4. In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey or maple syrup, and lime juice to make the bang bang sauce.
  5. Toss the cooked salmon bites in the sauce until evenly coated.
  6. Assemble bowls by adding cooked rice or quinoa as the base.
  7. Top with salmon bites, cucumber, shredded carrots, and avocado slices.
  8. Garnish with chopped green onions and drizzle extra sauce if desired.

Notes

  • Do not overcook salmon to keep it tender and juicy.
  • Adjust sriracha level depending on spice preference.
  • Can bake or air-fry salmon for a lighter version.
  • Store components separately for best texture.
  • Add toppings like edamame, cabbage, or mango for variety.
