A delicious hybrid of moist banana bread and fudgy brownies, made with ripe bananas for natural sweetness and a soft, dense texture, optionally topped with creamy frosting.

Ingredients

  • 3 ripe bananas (mashed)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 4 oz cream cheese (optional)
  • 1/4 cup unsalted butter (for frosting, optional)
  • 1 cup powdered sugar (optional)
  • 1/2 tsp vanilla extract (for frosting, optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
  2. Mash ripe bananas in a large bowl until smooth.
  3. Add melted butter, granulated sugar, and brown sugar, mixing until combined.
  4. Stir in eggs and vanilla extract until smooth.
  5. In a separate bowl, whisk flour, baking powder, and salt.
  6. Gradually mix dry ingredients into the banana mixture until just combined.
  7. Pour batter into prepared pan and spread evenly.
  8. Bake for 25–30 minutes until set and a toothpick comes out clean or with moist crumbs.
  9. Cool completely in the pan.
  10. If using frosting, beat cream cheese, butter, powdered sugar, and vanilla until smooth and spread over cooled brownies.
  11. Slice into squares and serve.

  • Use very ripe bananas for best sweetness and moisture.
  • Do not overmix the batter to avoid dense texture.
  • Add chocolate chips or nuts for extra flavor and texture.
