Baked Feta Chicken

A simple yet flavorful baked feta chicken dish where creamy, tangy feta melts with juicy chicken and roasted tomatoes to create a rich, comforting one-pan meal.

Ingredients

  • 4 chicken breasts or thighs
  • 200g block of feta cheese
  • 2 cups cherry tomatoes
  • 2 tbsp olive oil
  • 3 garlic cloves (minced)
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 tsp dried oregano or Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp fresh basil or parsley (chopped)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Place chicken in a baking dish and season with salt, black pepper, and dried herbs.
  3. Add cherry tomatoes around the chicken and sprinkle minced garlic over everything.
  4. Drizzle olive oil evenly over the dish.
  5. Place the block of feta cheese in the center.
  6. Bake for 25–30 minutes until the chicken is cooked through and tomatoes are soft.
  7. Remove from oven and gently mix the feta with the tomatoes to create a creamy sauce.
  8. Spoon the sauce over the chicken.
  9. Garnish with fresh herbs and serve.

Notes

  • Add spinach or zucchini for extra vegetables.
  • Increase red pepper flakes for more heat.
  • Serve over pasta, rice, or with roasted vegetables.
  • A block of feta gives the best creamy texture.
  • Add a splash of water when reheating to loosen the sauce.
