Ingredients

  • 2 slices bread
  • 1 ripe avocado
  • 2 eggs
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon olive oil
  • Fresh herbs, for garnish

Instructions

  1. Bring a pot of water to a gentle simmer.
  2. Carefully crack the eggs into the simmering water and poach for about 3 to 4 minutes until the whites are set and the yolks remain soft.
  3. While the eggs cook, toast the bread slices until golden and crisp.
  4. In a small bowl, mash the avocado with lemon juice, salt, and black pepper.
  5. Spread the mashed avocado evenly over the toasted bread.
  6. Carefully place one poached egg on top of each toast.
  7. Finish with red pepper flakes, olive oil, and fresh herbs.
  8. Serve immediately while warm.
