Fresh avocado and tomato salad made with ripe avocados, juicy tomatoes, and a light citrus dressing for a quick, creamy, and refreshing dish.

Ingredients

  • 2 ripe avocados, diced
  • 2 cups fresh tomatoes, chopped or sliced
  • 12 tbsp olive oil
  • 12 tbsp lemon juice or lime juice
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 red onion, thinly sliced (optional)
  • Fresh basil or parsley (optional)

Instructions

  1. Dice the avocados and chop the tomatoes into bite-sized pieces, then place them in a bowl.
  2. Add thinly sliced red onion if using.
  3. Drizzle olive oil over the ingredients.
  4. Squeeze fresh lemon or lime juice on top.
  5. Season with salt and black pepper.
  6. Gently toss everything together, being careful not to mash the avocado.
  7. Top with fresh herbs and serve immediately.

Notes

  • Best eaten fresh to prevent avocado from browning.
  • Add lemon or lime juice to slow oxidation.
  • Can be customized with cucumber, chickpeas, or mozzarella alternatives.
  • Prep tomatoes and dressing ahead, but add avocado just before serving.
