  • 2 cups almond flour
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1/2 cup milk of choice
  • 1 teaspoon vanilla extract
  • 1 tablespoon sweetener of choice (optional)
  • 1/4 teaspoon salt
  • Butter or oil, for greasing the waffle iron

Instructions

  1. Preheat the waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the almond flour, baking powder, and salt.
  3. In a separate bowl, beat the eggs and mix in the milk, vanilla extract, and sweetener if using.
  4. Add the wet ingredients to the dry ingredients and stir until a smooth batter forms.
  5. Lightly grease the waffle iron with butter or oil.
  6. Pour the batter into the waffle iron and cook until the waffles are golden brown and crisp.
  7. Carefully remove the waffles and serve immediately with your favorite toppings.

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze cooked waffles for up to 3 months and reheat in a toaster, oven, or air fryer.
  • The batter can be refrigerated for up to 24 hours before cooking.
