Ingredients

  • 4 medium potatoes, diced
  • 2 tablespoons olive oil or butter
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried parsley or 1 tablespoon fresh herbs
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Wash and dice the potatoes into small, even-sized cubes.
