A quick, creamy, high-protein whipped cottage cheese recipe blended until smooth with olive oil, lemon juice, and simple seasonings. Perfect as a spread, dip, or base for sweet or savory toppings.

Ingredients

  • 2 cups cottage cheese
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 clove garlic, optional

Instructions

  1. Add the cottage cheese to a food processor or blender.
  2. Add the olive oil, lemon juice, salt, black pepper, and garlic if using.
  3. Blend until completely smooth and creamy, stopping once or twice to scrape down the sides.
  4. Taste and adjust the seasoning as needed. For a looser texture, blend in a small splash of water or a little more olive oil.
  5. Serve immediately or chill briefly before serving. Top with fresh herbs, cracked pepper, chili flakes, or a drizzle of olive oil if desired.

Notes

  • Use full-fat cottage cheese for the richest and creamiest texture.
  • Low-fat cottage cheese also works well for a lighter option.
  • A food processor gives the smoothest result, but a blender or immersion blender can be used.
  • For a sweet version, blend with a little honey or maple syrup and serve with fruit or granola.
  • For a savory herb version, add chives, dill, parsley, or basil.
  • Store in an airtight container in the refrigerator for up to 3 days.
  • Stir before serving if the mixture settles after chilling.
  • Best served cold or cool rather than reheated.
