Warming Italian Broccoli Soup is a cozy and nourishing soup made with fresh broccoli, aromatic herbs, and a creamy optional twist. It’s perfect for a light meal or a comforting side dish, full of Italian-inspired flavor and ready in just 30 minutes.

Ingredients

  • 4 cups fresh or frozen broccoli florets
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 tablespoon olive oil
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme blend)
  • Salt and black pepper to taste
  • 1/2 cup heavy cream or milk (optional)
  • Grated Parmesan cheese (optional, for topping)
  • Red pepper flakes (optional, for heat)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery. Sauté for about 5 minutes until vegetables start to soften.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in broccoli florets, salt, pepper, and Italian herbs.
  4. Pour in the broth and bring to a gentle boil. Reduce heat and simmer for 15–20 minutes until broccoli is tender.
  5. For a creamier texture, use an immersion blender to partially or fully blend the soup. Add cream or milk if using, and stir until heated through.
  6. Serve hot, garnished with Parmesan cheese and red pepper flakes if desired.
