Ingredients

  • 1 medium butternut squash, peeled, seeded, and cubed (about 4 cups)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika or smoked paprika (optional)
  • 1 tsp fresh thyme or rosemary leaves (optional)
  • 1 tbsp maple syrup or honey (optional, for sweetness)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss cubed butternut squash with olive oil, salt, pepper, garlic powder, and paprika (if using).
  3. Spread the squash in a single layer on the prepared baking sheet, avoiding overcrowding.
