Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil (if needed)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, diced
  • 1 potato, peeled and diced
  • 1 cup green beans (fresh or frozen)
  • 1 (14.5 oz) can diced tomatoes (with juice)
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: 1 cup corn or peas

Instructions

  1. In a large pot over medium heat, brown the ground beef, breaking it up as it cooks. Drain excess grease if needed.
  2. Add onion and garlic; sauté for 2–3 minutes until fragrant.
  3. Stir in carrots, celery, and potatoes. Add tomatoes (with juice), green beans, broth, oregano, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer uncovered for 25–30 minutes, until vegetables are tender.
  5. If using corn or peas, stir them in during the last 5 minutes of cooking.
  6. Taste and adjust seasoning. Serve hot with bread or fresh parsley.

  • Swap ground beef for turkey or chicken for a lighter version.
  • Add zucchini, bell peppers, sweet potatoes, or cauliflower for variation.
