Vampire Pasta is a dramatic and delicious Halloween dinner made with black squid ink pasta, garlic-sautéed shrimp, white wine, and lemon. This spooky seafood dish delivers bold flavor and elegance, perfect for festive themed dinners or Halloween parties.

Ingredients

  • 12 oz squid ink pasta
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine
  • 1/4 cup lemon juice
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)
  • 1/2 cup reserved pasta water (as needed)

Instructions

  1. Cook squid ink pasta in salted boiling water according to package directions. Drain and reserve 1/2 cup of the pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1–2 minutes.
  3. Add shrimp and red pepper flakes. Cook for 2–3 minutes per side until shrimp are pink and opaque.
  4. Deglaze the pan with white wine and lemon juice. Simmer for 3–4 minutes until slightly reduced.
  5. Add cooked pasta to the skillet and toss to combine. Use reserved pasta water to loosen the sauce if needed.
  6. Season with salt and pepper to taste.
  7. Top with chopped parsley and Parmesan cheese if desired.
  8. Serve warm and enjoy your spooky Vampire Pasta.
