Ingredients

  • 4 slices thick bread (like sourdough or artisan bread)
  • 1/2 lb shrimp, peeled and deveined
  • 3 tbsp butter, melted
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Sauté the shrimp: Heat a skillet over medium-high heat. Season shrimp with salt and pepper. Sauté in 1 tbsp melted butter and minced garlic for 3–4 minutes until pink. Remove from heat and set aside.
  2. Prepare the bread: Brush each slice of bread with melted butter. Sprinkle a little minced garlic on the buttered side for garlic bread flavor.
  3. Assemble the sandwiches: On two slices, layer mozzarella and Parmesan. Add sautéed shrimp and top with remaining bread slices (buttered side out).
  4. Grill the sandwiches: In the same skillet, grill sandwiches over medium heat, pressing gently with a spatula. Cook 4–5 minutes per side or until golden brown and cheese is melted.
  5. Serve: Slice and garnish with chopped parsley if desired. Serve immediately.
