Ingredients

  • 2 boneless, skinless chicken breasts or thighs
  • 2 packs ramen noodles (without seasoning packets)
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes (oil-packed), chopped
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil or parsley, for garnish
  • Optional: 1 cup spinach or 1/2 cup sliced mushrooms

Instructions

  1. Season chicken with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Set aside and slice.
  3. In the same skillet, sauté garlic and sun-dried tomatoes for 1–2 minutes until fragrant.
  4. Add chicken broth and heavy cream. Bring to a simmer, then stir in Parmesan and red pepper flakes. Let simmer until slightly thickened.
  5. Meanwhile, cook ramen noodles according to package instructions. Drain and set aside.
  6. Return sliced chicken to the skillet. Add cooked noodles and toss to coat everything in the sauce.
  7. Garnish with fresh herbs and extra Parmesan. Serve hot.
