Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon turmeric powder
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup coconut milk
  • 2 cups spinach
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and sauté for about 5 minutes, until soft and translucent.
  3. Stir in garlic and ginger, cooking for 1 minute until fragrant.
  4. Add turmeric powder and stir for another minute to toast the spice.
  5. Pour in chicken broth and bring to a boil.
  6. Add shredded chicken and coconut milk. Reduce heat and simmer for 15–20 minutes.
  7. Stir in spinach and cook until wilted.
  8. Season with salt, pepper, and lemon juice just before serving.
