This Turkey & Brie Grilled Sandwich with Fresh Greens is a gourmet-style meal that’s quick and easy to prepare. Creamy brie, savory turkey, and crisp greens are layered between golden grilled bread, making a cozy and satisfying lunch or dinner option.

Ingredients

  • 4 slices of sourdough or multigrain bread
  • 4 oz sliced cooked turkey (deli or leftover)
  • 4 oz brie cheese, sliced (rind optional)
  • 1 cup mixed fresh greens (arugula, spinach, or spring mix)
  • 2 tsp cranberry sauce or Dijon mustard (optional)
  • 2 tbsp butter or olive oil (for grilling)

Instructions

  1. Preheat a skillet or grill pan over medium heat.
  2. Spread butter on one side of each slice of bread (this will be the outside for grilling).
  3. On the unbuttered side, layer brie slices, turkey, and fresh greens. Add cranberry sauce or Dijon mustard if desired.
  4. Top with the second slice of bread, buttered side out.
  5. Place the sandwich in the skillet and grill for 3–4 minutes per side, pressing slightly, until bread is golden and brie is melted.
  6. Remove from skillet and let rest for 1 minute before slicing and serving.

Notes

  • Use fig jam instead of cranberry sauce for a sweeter flavor.
  • Add thinly sliced apples or pears for extra crunch and sweetness.
  • Camembert or havarti can be used as alternatives to brie.
