Cool off with these Tropical Mango Popsicles — a refreshing summer treat made with ripe mangoes, creamy coconut milk, and a splash of lime. Naturally sweet, dairy-free, and bursting with tropical flavor, they’re perfect for pool days, picnics, or any sunny afternoon.

Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1/2 cup coconut milk
  • 1 tablespoon honey or agave syrup (optional, depending on mango sweetness)
  • A splash of lime juice

Instructions

  1. Combine diced mangoes, coconut milk, honey (if using), and lime juice in a blender.
  2. Blend until smooth and creamy.
  3. Pour the mixture into popsicle molds, leaving a little space at the top.
  4. Insert popsicle sticks into each mold and freeze for 4 to 6 hours, or until solid.
  5. Run warm water over the molds to release the popsicles.
