A fresh and flavorful pasta dish made with ripe tomatoes, fragrant basil, garlic, and olive oil, creating a light yet comforting meal perfect for any occasion.

Ingredients

  • 12 ounces pasta (spaghetti, penne, or preferred type)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh tomatoes, chopped (or 1 can diced tomatoes, 14 ounces)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup fresh basil leaves, chopped or torn
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  4. Stir in the chopped tomatoes, salt, black pepper, and red pepper flakes if using. Simmer for 10–15 minutes until the tomatoes soften and release their juices.
  5. Reserve about 1/2 cup of pasta water, then drain the pasta.
  6. Add the cooked pasta to the skillet with the sauce and toss to combine. Add a splash of reserved pasta water as needed to loosen the sauce.
  7. Stir in the fresh basil just before serving and sprinkle with Parmesan cheese if desired.

Notes

  • Canned diced tomatoes work well when fresh tomatoes are not in season.
  • Add grilled chicken or sautéed shrimp for a heartier meal.
  • Mix in fresh mozzarella for a creamy variation.
  • Add vegetables like spinach, zucchini, or mushrooms for extra nutrition.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently with a splash of water or olive oil to refresh the sauce.
