Ingredients

  • 4 oz cream cheese or mascarpone, softened
  • 1/2 cup powdered sugar
  • 1 tsp instant espresso powder or 1 tbsp strong brewed coffee
  • 1/2 cup ladyfinger crumbs or crushed vanilla cookies
  • 2 oz dark or semisweet chocolate, chopped
  • 2 tbsp heavy cream

  • Optional: cocoa powder, melted chocolate, or crushed cookies for coating

Instructions

  1. Combine softened cream cheese (or mascarpone) with powdered sugar and espresso powder until smooth.
  2. Stir in finely crushed ladyfingers or vanilla cookies to form a soft, scoopable dough.
  3. Chill mixture in the fridge for 30 minutes to firm up.
  4. Scoop small portions and roll into balls; place on a parchment-lined tray.
  5. Melt chocolate with a splash of cream for dipping, or dust truffles with cocoa powder.
  6. Roll each truffle in the coating of choice and chill again until set.
  7. Store in the fridge until ready to serve.
