Ingredients

  • 1 box chocolate cake mix (plus ingredients to prepare: eggs, oil, water)
  • 2 lbs whole milk ricotta cheese
  • 3/4 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 box (5.1 oz) instant chocolate pudding mix
  • 2 cups cold milk (for pudding)
  • 1 container (8 oz) whipped topping (like Cool Whip) or homemade whipped cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Prepare chocolate cake mix according to package instructions. Pour the batter into the prepared pan.
  3. In a separate bowl, mix ricotta cheese, sugar, eggs, and vanilla until smooth.
  4. Spoon the ricotta mixture evenly over the cake batter. Do not stir.
  5. Bake for 50–60 minutes, until a toothpick inserted comes out clean. Let cake cool completely.
  6. In a bowl, whisk together pudding mix and cold milk until thickened. Fold in whipped topping until smooth.
  7. Spread the pudding mixture over the cooled cake. Refrigerate for at least 4 hours or overnight.
