This creamy garlic tomato pasta is a rich and flavorful weeknight dinner made with pantry staples. A luscious tomato-cream sauce infused with garlic clings perfectly to pasta for a comforting, quick, and satisfying meal in under 30 minutes.

Ingredients

  • 12 oz pasta of choice (penne, spaghetti, fettuccine, etc.)
  • 12 tbsp olive oil
  • 34 cloves garlic, minced
  • 1 can (14–15 oz) crushed tomatoes or tomato sauce
  • 1 tbsp tomato paste (optional)
  • 1/2 cup heavy cream or whole milk
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup grated parmesan cheese (optional)
  • Fresh basil or parsley, for garnish (optional)
  • Reserved pasta water (as needed to loosen sauce)

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1 cup of pasta water and drain the rest.
  2. In a large skillet, heat olive oil over medium-low heat. Add minced garlic and sauté for 30–60 seconds until fragrant.
  3. Stir in crushed tomatoes and tomato paste (if using). Let simmer for 5–10 minutes to deepen the flavor.
  4. Stir in cream or milk. Season with salt, pepper, and red pepper flakes. Simmer until smooth and creamy.
  5. Add drained pasta directly into the sauce. Toss to coat, adding reserved pasta water as needed to reach desired consistency.
  6. Top with grated parmesan and fresh herbs, if desired. Serve immediately.
