These soft and chewy peanut butter cookies are incredibly easy to make with just a few pantry ingredients. No mixer or chilling needed—just classic, comforting flavor in every bite.

Ingredients

  • 1 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together peanut butter, sugar, egg, vanilla extract, and baking soda until smooth.
  3. Roll dough into 1-inch balls and place on the prepared baking sheet.
  4. Flatten each ball slightly with a fork, making a crisscross pattern.
  5. Bake for 9–11 minutes, or until edges are set and lightly golden.
  6. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
