Ingredients

  • 1 lb chicken breast or firm tofu, cubed
  • 1½ cups fresh pineapple chunks (or well-drained canned)
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 1 cup carrots, julienned
  • ½ cup teriyaki sauce (store-bought or homemade)
  • 2 tablespoons green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (for garnish)
  • Optional: cashews or peanuts, red pepper flakes for spice

Instructions

  1. Preheat oven to 400°F or preheat grill to medium-high.
  2. Tear 4 large sheets of heavy-duty foil and lightly coat with cooking spray.
  3. In the center of each foil sheet, layer chicken or tofu, pineapple, and vegetables.
  4. Drizzle with teriyaki sauce and fold foil into tightly sealed packets with space for steam.
