Swiss Cheese & Caramelized Onion Crockpot Meatloaf is a hearty and comforting slow-cooked dinner recipe featuring tender ground beef, sweet caramelized onions, and gooey Swiss cheese. This easy crockpot meatloaf is perfect for family meals, delivering gourmet flavor with minimal effort.

Ingredients

  • 34 large sweet onions, sliced
  • 4 tablespoons salted butter
  • 2 pounds ground beef
  • 1 cup bread crumbs
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup Swiss cheese, shredded
  • 1/4 cup beef broth

Instructions

  1. Melt butter in a skillet over medium heat. Add sliced onions and caramelize for 15–20 minutes, stirring occasionally.
  2. In a large bowl, combine ground beef, bread crumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  3. Form the meat mixture into a loaf and place in the crockpot.
  4. Pour beef broth around the meatloaf to keep it moist.
  5. Top the meatloaf with caramelized onions.
  6. Cover and cook on low for 6–8 hours, or until internal temperature reaches 160°F (71°C).
  7. About 15 minutes before done, sprinkle shredded Swiss cheese on top and re-cover to let it melt.
  8. Serve warm with onions and melted cheese on top.
