Ingredients

  • 1 cup sugar
  • 1 cup dark brown sugar
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 6 tablespoons real butter
  • 1 cup pecans, coarsely chopped

Instructions

  1. Prep Your Space: Line a flat surface with wax paper and set out a tablespoon for scooping.
  2. Combine the Ingredients: In a large 4-quart saucepan, combine sugar, dark brown sugar, milk, vanilla, melted butter, and pecans.
  3. Melt and Mix: Heat on low, stirring frequently, until the butter melts and mixture is smooth.
  4. Boil Briefly: Increase heat to medium-high and boil for exactly 3 minutes, stirring constantly.
  5. Stir to Thicken: Remove from heat and stir vigorously for 2 minutes until thickened and slightly matte.
  6. Scoop and Set: Quickly spoon dollops of mixture onto wax paper. Let cool for 10–15 minutes to set.
  7. Store for Later: Once cooled, store in an airtight container at room temperature.

Notes

  • Add a pinch of cinnamon or cayenne for spice.
  • Substitute other nuts like walnuts or almonds.
  • Drizzle set pralines with melted chocolate for a fancier touch.
  • A splash of bourbon adds deeper Southern flair.
  • Avoid overcooking or under-stirring to prevent graininess.
