Sweet & Savory Peach Quesadillas are a unique twist on a classic, combining juicy peaches, melty cheese, and a touch of spice for a deliciously balanced dish perfect for lunch, dinner, or appetizers.

Ingredients

  • 2 fresh ripe peaches, sliced thin
  • 4 flour tortillas
  • 1 to 1 1/2 cups shredded mozzarella or Monterey Jack cheese
  • Fresh basil or arugula (optional, for garnish)
  • 12 tbsp olive oil or butter (for pan-frying)
  • Honey or balsamic glaze (optional, for drizzling)
  • Red chili flakes or jalapeño slices (optional, for heat)
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and brush one side of a tortilla with olive oil or butter.
  2. Place the tortilla, oiled side down, in the skillet. Add a layer of shredded cheese and peach slices on one half. Add chili flakes or jalapeños if desired.
  3. Fold the tortilla in half and cook for 2-3 minutes until the bottom is golden and crispy.
  4. Flip and cook the other side until the cheese is melted and the tortilla is crisp.
  5. Remove from skillet, let cool slightly, and slice into wedges.
  6. Drizzle with honey or balsamic glaze and garnish with fresh herbs if using. Serve warm.
