Sweet Potato Bites are the perfect sweet-and-savory appetizer! Roasted sweet potato rounds form the base for customizable toppings like goat cheese, herbs, honey, or marshmallows. These healthy, gluten-free bites are quick to make, easy to prep ahead, and always a hit at holiday parties or snack spreads.

Ingredients

  • 23 medium sweet potatoes, sliced into ½-inch rounds
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional Toppings:
  • Goat cheese or whipped feta
  • Mini marshmallows
  • Chopped fresh herbs (thyme, rosemary, parsley)
  • Honey or maple syrup
  • Chopped pecans or walnuts
  • Cranberry sauce
  • Cream cheese
  • Chili flakes
  • Marinara + mozzarella

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and slice sweet potatoes into ½-inch thick rounds (leave skin on).
  3. Toss rounds in olive oil, salt, and pepper until coated.
  4. Arrange in a single layer on the baking sheet.
  5. Roast for 20–25 minutes, flipping halfway through, until golden and tender.
  6. Let cool slightly, then add toppings of choice.
  7. For sweet versions, drizzle with honey or broil mini marshmallows.
  8. For savory bites, top with goat cheese, herbs, or other toppings.
  9. Serve warm or at room temperature.
